Keto Breakfast Sandwich

This is the Ultimate Breakfast Sandwich!! And quickly becoming my favorite! It is low in carbs, high in good fats and packed with flavor! The pork sausage patties on the outside are the perfect touch to not make you miss bread at all!

Ingredients

• 2 sausage patties

• 1 egg

• 1 tbsp cream cheese

• 2 tbsp sharp cheddar

• 1/4 medium avocado, sliced

• 1/4-1/2 tsp sriracha (to taste)

• Salt, pepper to taste

Directions

1 Cook sausages per package instructions and set aside. I buy the precooked patties and warm up over stove or in the microwave

2 In small bowl place cream cheese and sharp cheddar. Microwave for 20-30 seconds until melted

3 Mix cheese with sriracha, set aside

4 Mix egg with seasoning and make small omelette

5 Fill omelette with cheese sriracha mixture and fold in half then in a quarter. Assemble sandwich with sliced avocado.

Low Carb Keto Pigs in a Blanket

Ingredients
“Fathead” Pizza Dough using THIS recipe
8 Beef Hot Dogs
Sesame Seeds or Poppy Seeds (optional)

Directions
Step 1: Prepare dough recipe found above. Preheat oven to 425 degrees.

Step 2: Separate dough into 8 sections, and roll into balls.

Step 3: Using your hand, flatten and roll each piece of dough around a hot dog.

Step 4: Roll in sesame or poppy seeds (if desired). Place on a parchment covered baking pan seam side down.

Step 5: Bake in the oven at 425 degrees for about 14-17 minutes until dough is cooked and slightly brown.

Fathead Pizza Dough is a fantastic invention meant to put smiles on all the faces of low carb and keto eaters!  Try it. You will be amazed.

Prep Time 2 minutes

Cook Time 14 minutes

Total Time 16 minutes

Ingredients

• 2 oz cream cheese

• 3/4 cup shredded mozzarella

• 1 egg beaten

• 1/4 tsp garlic powder

• 1/3 cup almond flour

Instructions

1 Preheat the oven to 425°

2 In a small bowl, add cream cheese and mozzarella. Microwave on high for 20 seconds at a time until melted.

3 Add remaining ingredients to the melted cheese.

4 Mix as well as you can. It does get a tad bit odd here, because mozzarella turns to a big glob when melted. It is ok, it will work together.

5 Cover & Place in Refrigerator for 10 minutes

6. Put a sheet of parchment paper on a pizza pan or stone. Place dough in middle. Top with a second sheet of parchment paper and roll out to approx. 1/2″ thick

6 Bake for 12-14 minutes or until golden brown.

7 Top with your favorite toppings ! It is seriously delicious!

Easy Marinara Sauce

Super Easy “No Chop” Marinara Sauce recipe literally took me only 5 minutes to prepare! Why should you bother to make your own sauce??  Store bought jarred sauce may be convenient, but it’s chalked full of added sugar and fillers.

Once prepared, you can freeze it in 1/2 cup portions for whenever you need it.

Wanna know what’s crazy awesome about it? YOU WON’T EVEN NEED A POT TO MAKE IT. I kid you not, I never cook this sauce before using it! I heat it before eating it in a recipe, but I usually make it without simmering it at all.

• Yield: 4 cups

INGREDIENTS

• 28 oz can Peeled San Marzano Tomatoes (no sugar added)

• 1/4 tsp black pepper

• 1/2 tsp red pepper flakes

• 1 tsp onion powder

• 1 tsp garlic powder

• 1 tsp dried basil

• 1 tsp dried oregano

• 1 tsp dried parsley

• 1 tsp salt (add more if necessary)

• 2 Tbsp red wine vinegar

• 1/4 cup extra virgin olive oil

INSTRUCTIONS

Puree the tomatoes in a small blender or magic bullet. Stir in the remaining ingredients. Taste and adjust salt if necessary

Cheesy Spaghetti Squash Skillet

This dish was super easy to make and very satisfying! The low carb cheesy spaghetti squash skillet was a huge hit with my family!  Tender strands of spaghetti squash amongst the homemade, tangy meat sauce and loaded with stringy mozzarella cheese?  What’s not to love?!?!  

 

INGREDIENTS

• 1 lb Ground Beef

• 1 1/2 cups easy keto marinara sauce

•4 cups cooked spaghetti squash

• 1/4 cup grated parmesan cheese

• 1 1/2 cups shredded whole milk mozzarella cheese

• Fresh Basil or Parsley to garnish

INSTRUCTIONS

1 Heat a large oven proof skillet and add your ground beef to it.

2 Season with salt and pepper and cook 5 minutes, stirring so the beef is in fine pieces rather than large chunks.

3 Add the marinara sauce and cook for 3 minutes.

4 Add the spaghetti squash and parmesan cheese and stir well to combine.

5 Top with the shredded mozzarella.

6 Bake at 375 degrees for 20 minutes or until the cheese is melted and turning golden brown.

7 Serve garnished with chopped fresh basil or parsley if desired.

*Notes: I doubled this batch & placed in a 9×13 casserole dish. It made approx. 12 servings and used the full marinara sauce recipe.
